Declaw's Natural Decaffeination Process
Decaffeinating coffee is no easy feat. In order to remove the caffeine from the beans while preserving the flavor, four different processes have been developed: two solvent-based and two non-solvent-based.
Solvent Based
The most common solvent-based process is "indirect decaffeination", which uses water to extract the caffeine. The water is then removed and replaced with a solvent, such as ethyl acetate. Though this process is efficient, it often changes the flavor of the coffee, as it can strip away some of the oils and carbohydrates that contribute to the taste.
The other solvent-based process, "direct decaffeination", uses solvents from the start. The beans are soaked in methylene chloride or ethyl acetate, which removes the caffeine. This process is less common, as it can be more harmful to workers and the environment.
Non-Solvent Based
The first non-solvent-based process is "Swiss water decaffeination". In this process, water is used to extract the caffeine, and then the beans are placed in a solution of activated charcoal. This absorbs the caffeine molecules, leaving the coffee beans caffeine-free.
The final decaffeination process is carbon dioxide decaffeination. In this process, pressurized CO2 is used to extract the caffeine from the beans. This method is considered to be the safest and most gentle of all the methods, making it a favorite among premium coffee roasters.
